Ingredients
 

  • 1 cup Quinoa
  • 2 cups Vegetable broth
  • 0,5 Red peppers
  • 1 tsp Ground turmeric spice
  • 1 Onion
  • 1 clove Garlic
  • Olive oil for frying
  • Salt and pepper
  • Chilli (cayenne pepper)
  • 1 pinch Freshly ground fennel seeds
  • 1 pinch Freshly ground coriander
  • Fresh coriander

Instructions
 

  • Wash the quinoa, cut the onion, garlic and bell pepper into small pieces. Fry the onion and garlic in oil until light brown.
  • Sweat quinoa and paprika briefly with turmeric and then fill up with the stock.
  • Bring everything to the boil, add the spices, turn the stove down and slowly let it simmer.
  • If you want, you can add chopped fresh coriander at the end.
