Vegetarian: Quinoa Patties with Paprika and Mushroom Sauce

Ingredients
 

Patties:

  • 100 g Quinoa
  • 250 g Vegetable broth
  • 2 tbsp Millet flakes
  • 1 small Onion
  • 0,5 Leek
  • Salt and pepper
  • 1 splash Lemon
  • 1 Egg

Sauce:

  • 200 g Mushrooms
  • 150 ml Vegetable stock
  • 1 Hot peppers
  • 3 tsp Tomato paste
  • 2 tsp Curry
  • 2 tbsp Butter
  • 200 ml Cream
  • 2 tsp Paprika powder
  • 1 clove Garlic fresh
  • 1 Yellow peppers
  • Salt and pepper

Instructions
 

Patties:

  • For the patties quinoa with the stock, bring the mixture to the boil. Mix in 2 tbsp millet flakes. Chop the onion and leek and fry in a little olive oil. Then add the egg and onion mixture to the cooled mixture.
  • Now only stir in enough millet flakes until a firm dough is formed, then shape patties, turn in breadcrumbs and fry in olive oil.

Sauce:

  • For the sauce, cut the onion and garlic into small pieces and sauté in the butter. Chop the peppers, mushrooms and peppers, add to the onion mixture and sauté Now add the curry and paprika powder. Sweat everything through.
  • Add the stock and season with salt and pepper. Finally, bring the cream to the boil and simmer slowly for about 10 minutes, season again and season again if necessary.
