Vegetarian rice casserole

Ingredients for 4 servings:

  • 2 cups rice
  • 1 can kidney beans
  • 1 can of tomatoes, chopped
  • 1 pack of sheep’s cheese
  • 1 bell pepper(s), yellow
  • 1 small onion(s)
  • 2 tsp vegetable broth, instant
  • 2 tsp honey
  • 100 ml cream
  • 100 g cheese, grated

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the rice as usual. Chop the bell peppers and onion. Sauté the bell peppers and onion, then add the tomatoes and cream and simmer gently. Season with vegetable stock and honey or agave syrup. Chop the feta cheese and combine it with the drained beans, rice, and the finished sauce in a casserole dish. Sprinkle the cheese over the top and bake in the oven at 180°C (350°F) for 20 minutes.
