Vegetarian: Stir-fried Vegetables with Fried Eggs

The perfect vegetarian: stir-fried vegetables with fried eggs recipe with a picture and simple step-by-step instructions.

  • 4 Onions
  • 1 Red peppers
  • 1 Green peppers
  • 200 g Leek white
  • 3 Garlic cloves
  • 3 tbsp Extra virgin olive oil
  • Salt
  • Black pepper from the mill
  • Dried marjoram
  • Sweet paprika
  • 2 Eggs per person

Preparation:

  1. Peel the garlic and cut into small cubes, grate with the spices in a mortar (forgot to take a photo, sorry).
  2. Peel and halve the onions and cut into half rings.
  3. Halve the peppers, remove the seeds and remove the partitions. Rinse with cold water and dry briefly with kitchen paper. Cut into stripes.
  4. Cut the leek in half and wash to flush out the sand. Cut into stripes.

We take action:

  1. Heat the olive oil well in a large pan (if bubbles appear on a wooden handle, it is hot).
  2. Add the onion half-rings and sweat yellow. Then add the pepper strips and let them steam. Add the leek and continue steaming.
  3. When everything is firm to the bite, add the spices to the vegetables and mix well.
  4. It is best to beat 2 eggs each in a little oil or margarine in 2 pans, sprinkle with salt, pepper and paprika and fry.
  5. Place the vegetables on a preheated plate and lay the eggs on top.
  6. It goes well with this delicious potato purée, as described in KB for me.
