Vegetarian stuffed zucchini

Ingredients for 4 servings:

  • 1 onion(s)
  • n. B. Oil for frying
  • 3 large tomatoes
  • Salt
  • Thyme
  • 1 can of corn
  • 4 zucchini
  • 1 pack of feta cheese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

First, peel and dice the onion, and sauté it in oil. Meanwhile, wash and finely chop the tomatoes, and add them. Season with salt and thyme, then add the corn at the end. Meanwhile, wash, halve, and hollow out the zucchini. Bake in a preheated oven at 200°C (top/bottom heat) for 10 minutes. Remove the zucchini and fill with the onion and tomato mixture. Crumble the feta cheese over the zucchini and return it to the oven for another 25 minutes. Serve with Turkish rice.
