Whole-wheat toast lasagna with spinach

Ingredients for 2 servings:

  • 6 slices of whole-grain toast
  • 1 pack of frozen spinach
  • 2 tbsp flour
  • salt and pepper
  • ½ cup water
  • 12 cubes of feta cheese
  • 4 small slices of Emmental cheese

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Recycling leftovers

Toast all 6 slices of whole-wheat toast. Meanwhile, put a saucepan on the stovetop and warm the spinach. Then, half-fill a cup with water and add 2 tablespoons of flour. Mix with a whisk until smooth. When the spinach is no longer frozen, add the flour and water mixture to the pan and mix well. Then stir in the feta cubes. Finally, layer the toast slices and spinach sauce alternately in a baking dish like a lasagna. Top with the cheese slices. Place the baking dish in the oven at 200°C (fan oven) for about 15 minutes. When the Emmental cheese is nice and crispy and almost brown, remove from the oven and serve.
