Vegetarian vegetable noodles

Ingredients for 4 servings:

  • 400 g pasta
  • 1 onion(s)
  • 300 g broccoli, frozen or fresh
  • 200 g sugar snap peas
  • 1 eggplant(s)
  • 1 jar bamboo shoot(s)
  • 3 tbsp soy sauce, 3 tbsp stir-fry sauce and 1 tbsp sweet and sour sauce
  • 1 dashes lemon juice
  • Ginger
  • pepper
  • cumin
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the noodles in plenty of salted water until al dente. Thaw the broccoli or cut fresh broccoli into florets. Cut the snow peas into strips and the eggplant into small cubes. Dice the onion, add to a pan, and fry in a little oil. Add the broccoli and the stir-fry sauce. Add the snow peas and eggplant and simmer briefly. Drain the bamboo shoots in a sieve and mix in. Season with pepper. Now drain the cooked noodles and mix in. Add a little ginger and cumin and season with lemon juice, soy sauce, and sweet and sour sauce. Mix everything well, simmer briefly, and then serve.
