Ingredients for 10 servings:

  • 750 g rice, cooked
  • 1 can of corn
  • 1 apple
  • 1 large nectarine(s)
  • 3 large gherkins
  • ½ jar mayonnaise
  • ¼ bottle of curry ketchup
  • 4 tbsp Hungarian-style paprika sauce

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

good for using up leftovers

Place leftover rice or freshly cooked and cooled rice into a suitable bowl. Peel and finely dice the apple. Wash and finely dice the nectarine. Add the pickles. Add everything to the rice and mix well. Add mayonnaise, curry ketchup, and paprika sauce. Mix well. Cover the salad and refrigerate. This salad is a great way to use up leftover rice or leftover sauce. Variations with pineapple and other sauces are possible. Curry sauce also tastes great. You could also add sausage or leftover chicken.
