Ingredients for 4 servings:
- 125 g breakfast bacon
- 1 onion(s)
- 8 tomatoes
- 2 eggs
- Salt
- Paprika powder, sweet
- 1 tbsp chives, chopped
- 50 g cheese, grated
- 20 g butter
- ½ bunch parsley
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Finely dice the bacon and peeled onion. Fry the bacon in an ovenproof dish. Fry the diced onion in it. Meanwhile, wash the tomatoes, cut off the tops, and carefully scoop them out with a teaspoon. Place them open-side up in the ovenproof dish. Then beat the eggs with salt, paprika, and chopped chives. Divide them among the tomatoes. Sprinkle with grated cheese. Place small pieces of butter on top. Replace the tops at an angle. Preheat the oven to 200°C and bake for about 20 minutes.
