Ingredients for 1 servings:

  • 175 g sugar
  • 3 eggs
  • 175 g butter, soft, or margarine
  • 175 g flour
  • 1 sachet of vanilla sugar
  • 1 tsp baking powder
  • 1 bag of orange zest
  • 1 bag of lemon zest
  • 1 large orange(s)
  • possibly milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

also known as vitamin cake or Barbara cake

Beat the eggs and sugar until frothy. Add the remaining ingredients, except for the orange. If necessary, add a little milk to create a batter that’s difficult to break. Pour the batter into 10 prepared muffin cups (just below the rim – the muffins will rise). Bake in a preheated oven at 150-175°C (top/bottom heat) for 25 minutes (depending on the oven, do the skewer test). Let cool, remove from the cups, and place in a deep dish. Now squeeze the orange and squeeze the juice over the muffins. The remaining juice will flow into the dish and be absorbed by the muffins. Tastes very fruity and delicious.
