Peel the onion and leave whole. Peel and dice the potatoes. Trim the rind from the bacon. Cut the bacon into small cubes and set aside; it will go into the soup at the end. Put everything in a pot and add enough water to cover the ingredients. Bring to a boil. When the potatoes are soft after about 15 minutes, remove the onion from the pot and add the drained white beans to the soup. Season to taste with salt, pepper, sugar, and vinegar. Meanwhile, melt the diced bacon in a pan and add it to the pot at the end. Heat everything up again and plate up. Grandma Vroni says it always takes about 30 minutes from start to plate.
