Ingredients for 3 servings:
- 7 potatoes
- 2 carrots
- 1 leek(s)
- ½ bunch parsley
- 3 pairs of sausages (Wiener)
- Salt
- possibly vegetable broth, granulated
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Potato soup, simple and good
Peel and chop the potatoes, carrots, leeks, and parsley, then boil in about 1.5 liters of lightly salted water for about 30 minutes. Then puree the soup with a hand blender until smooth. Season with salt and, if desired, a little vegetable stock. Bring back to a boil briefly. Cut the Vienna sausages into thin slices, arrange them on the plates as a soup garnish, and ladle the hot soup over them.
