Waffles from Brussels

Ingredients for 1 servings:

  • 200 g butter
  • 150 g sugar, or 50 g more sugar to taste
  • 2 packs of vanilla sugar (Bourbon vanilla) or vanilla flavoring
  • 1 pinch of salt
  • 5 eggs, separated
  • 400 g flour, type 550
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 400 ml milk
  • 200 ml mineral water

Working time approx. 20 minutes; Total time approx. 20 minutes

Brussels waffles

Beat the egg whites with a pinch of salt until stiff peaks form and refrigerate. Cream the butter with the sugar and vanilla sugar until creamy. Add the egg yolks and beat until fluffy. Sift together the flour, cinnamon, and baking powder, then add alternately with the milk and mix. Then stir in the mineral water and finally fold in the beaten egg whites. Let the batter rest for about 15 minutes and then bake crispy waffles in a Belgian waffle iron. This amount of batter yields 10-11 waffles in a Belgian waffle iron. A regular waffle iron will yield about twice as many.
