- 100 g quark
- 100 g margarine or butter
- 100 g wholemeal flour
- 1 pinch(s) of baking powder
- 1 pinch of salt

Combine margarine, egg, flour, a tiny pinch of baking powder (a teaspoonful for 100g of flour), and a tiny pinch of salt for a more vibrant flavor in a bowl and mix with a hand mixer until smooth. Finally, fold in the quark and knead together. The batter will look very stiff, but it will be fine. Bake the waffles in batches in the Belgian waffle iron until all the batter is used up. I bake without greasing the waffle iron beforehand, for 7 minutes for a yellow crust and 8 minutes for a golden brown crust. During baking, portion the batter carefully so it doesn’t run out of the waffle iron. 100g of flour makes 6 waffles. The waffles taste savory with butter, cream cheese, sausage, cheese, tomatoes, and cucumbers. Or sweet – with honey, maple syrup, berries, and banana. The waffles can be baked in advance, frozen, and then reheated until crispy in the toaster or oven.
