Walnut Bolognese
The perfect walnut bolognese recipe with a picture and simple step-by-step instructions.
- 100 g Walnuts
- 2 Carrots
- 1 Celery stalk
- 1 Zucchini
- 1 Onion
- 1 Can Chopped tomatoes
- 250 ml Vegetable broth
- 2 tbsp Tomato paste
- 1 tsp Agave syrup
- Pepper, Italian dried herbs
- Gradually “shred” the walnuts and vegetables separately in the blitz chopper (or food processor) until they are fine.
- Roast everything together in a little oil in a deep pan over medium heat, be patient and stir occasionally. It should brown a bit, but not burn
- Stir in tomato paste and roast briefly. Stir in the broth, chopped tomatoes, agave syrup and spices.
- Let the lid stew for 30 minutes. Serve with vegan Parmesan to taste.
