Walnut Bolognese

The perfect walnut bolognese recipe with a picture and simple step-by-step instructions.

  • 100 g Walnuts
  • 2 Carrots
  • 1 Celery stalk
  • 1 Zucchini
  • 1 Onion
  • 1 Can Chopped tomatoes
  • 250 ml Vegetable broth
  • 2 tbsp Tomato paste
  • 1 tsp Agave syrup
  • Pepper, Italian dried herbs
  1. Gradually “shred” the walnuts and vegetables separately in the blitz chopper (or food processor) until they are fine.
  1. Roast everything together in a little oil in a deep pan over medium heat, be patient and stir occasionally. It should brown a bit, but not burn
  1. Stir in tomato paste and roast briefly. Stir in the broth, chopped tomatoes, agave syrup and spices.
  1. Let the lid stew for 30 minutes. Serve with vegan Parmesan to taste.
