Walnut – Coconut – Vanilla – Hupferl

Ingredients for 2 servings:

  • 200 g walnuts, finely chopped
  • 260 g butter
  • 170 g brown sugar
  • 4 egg yolks
  • 1 bottle of butter-vanilla flavoring
  • 1 pinch of salt
  • 350 g flour
  • 1 ½ tsp baking powder
  • Cake icing, white (or white chocolate with a little coconut oil)
  • Desiccated coconut

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cream soft butter until fluffy, then add sugar, gradually whisk in egg yolks and flavoring. Combine flour, baking powder, and salt and fold in with the nuts. Form into balls (about 2 cm) and place on a baking sheet lined with baking paper. Flatten slightly with a fork and bake in a preheated oven at 160°C (convection oven) for about 10-12 minutes. Heat the glaze (or warm white chocolate with a little coconut oil in a water bath). Dip the cooled biscuits into the glaze and press the same side into the coconut flakes.
