Ingredients for 1 servings:

  • 125 g walnuts, coarsely chopped
  • ½ liter vinegar (white wine vinegar), good
  • 5 cloves
  • 1 stalk(s) cinnamon
  • 2 drops of caramel coloring, for coloring (depending on taste)
  • 1 tbsp maple syrup, to taste (depending on taste)

Working time approx. 15 minutes; Rest period approx. 42 days; Total time approx. 42 days 15 minutes

Briefly heat the chopped walnuts and vinegar in a small saucepan on the stove (approx. 40°C), then cool the mixture in the pan in a cold water bath in the sink while stirring. Place the cloves and cinnamon stick (you may need to halve the stick depending on how long it is) into a wide-mouthed glass bottle (a returnable milk bottle with a twist-off lid is best), pour the cooled walnut and vinegar mixture into the bottle, and screw the lid on. Let the mixture steep on a windowsill for about 6 weeks. Strain the mixture through a cheesecloth. Add caramel coloring and maple syrup to taste to the vinegar, mix well, and then pour into a decorative vinegar bottle.
