Ingredients for 4 servings:

  • 8 eggs
  • 250 g flour
  • some salt
  • 1 cup milk
  • 1 cup of beer (pilsner or wheat beer)
  • 50 g butter
  • 80 g raisins or currants
  • n. B. Icing sugar for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Separate the eggs. Beat the egg whites with a little salt until stiff peaks form and set aside. Then beat the egg yolks with milk, a little salt, and the beer until frothy, gradually adding the flour. Carefully fold in the egg whites; do not overbeat. Heat a knob of butter in a pan, add a portion of the batter, sprinkle in the currants, and tear them into pieces once set. Fry until golden brown, serve, and sprinkle generously with powdered sugar. Homemade applesauce goes well with the batter.
