Ingredients for 4 servings:
- 500g penne
- Water (salt water)
- 500 g arugula
- 1 jar tomatoes, dried in oil
- 1 jar pesto, red or green, to taste
- 2 packs of feta cheese
- e.g. balsamic vinegar
- 1 pack of pine nuts

Cook the pasta in salted water according to the package instructions. Meanwhile, trim the lettuce, remove the stems, finely chop the sun-dried tomatoes, and finely chop the feta cheese. Once the pasta is ready, toss it with the pesto in a bowl. Let it cool slightly, then add the lettuce and sun-dried tomatoes. If you like, you can also add a packet of pine nuts (roasted or ungreased). Once cooled, add the feta cheese, toss the lettuce, season with salt and pepper, and, if desired, a generous drizzle of balsamic vinegar.
