Ingredients for 4 servings:
- 500 g asparagus, white
- 500 g asparagus, green
- salt and pepper
- 100 g crème fraîche
- 2 tbsp lemon juice
- 2 tbsp oil
- 1 bunch of chives
- 100 g cream
- 1 clove(s) garlic
- 4 tbsp oil
- 12 prawns, raw, peeled
- Lemon(s), the peel
- Sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook peeled asparagus in salted water with a little sugar. Drain and keep warm. Combine crème fraîche, lemon juice, and oil. Season with salt, pepper, and a pinch of sugar. Finely chop the chives and stir two-thirds into the cream. Peel and halve the garlic, and fry in oil. Remove. Fry the shrimp all over in the garlic oil over medium heat until pink. Serve with asparagus, sauce, and shrimp. Garnish with chives and lemon zest.
