Ingredients for 4 servings:
- 150 g arugula
- 250 g mushrooms (white or brown)
- 50 g Parmesan
- 4 tbsp olive oil
- 3 tbsp white balsamic vinegar
- Pepper, black, from the mill
- Salt
- Sugar

quick and tasty
Wash the arugula, spin it dry, and arrange it on a platter. Trim and slice the mushrooms. Heat the oil in a pan and fry the mushrooms until they absorb water. Deglaze with white balsamic vinegar and season with the remaining ingredients. Arrange on top of the arugula. Coarsely grate the Parmesan cheese and scatter it over the top. Serve immediately. Tip: White mushrooms absorb water more quickly and more quickly than brown mushrooms. The brown mushrooms have a more intense flavor.
