Ingredients for 4 servings:
- 1 ½ kg new potatoes, waxy, organic
- 4 Mettenden, smoked
- 2 large vegetable onions, variety Sweat
- 150 g sour cream, fresh
- 2 tsp, heaped mustard, medium hot
- some milk
- some salt
- 1 pinch of peppercorns
- 1 handful of chives
- 1 pinch of chili flakes
- some oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash the potatoes thoroughly. Bring the skins to a boil in a pot of salted water. Cook for approximately 20-25 minutes, depending on the size of the potatoes. In the meantime, peel the onions and cut them into small pieces or thin rings. Add oil to a pan. Sauté the onions slowly over medium heat until translucent. The longer the onions are in the pan, the sweeter they will develop. Cut the Mettenden sausages into small pieces and fry them briefly after the onions. Only briefly, otherwise they will become too hard and tough. In a small bowl, mix the sour cream and mustard with a little milk until smooth. The more milk you use, the lighter the salad dressing will be. Season well with salt and red pepper. Tip: If you like it spicy, add chili flakes, if desired. Let the potatoes cool briefly and then slice them while they are still warm. The thin skin of the new potatoes can be eaten. Wash the chives and cut them into small rings. Now to serve: Either combine all the ingredients and serve the warm potato salad on plates, or arrange it in layers and pour the salad dressing over it. Finally, sprinkle with the washed chives. If you have any leftovers for the next day, store them in the refrigerator. This way, it will be well-seasoned the next day and taste great even cold.
