Ingredients for 2 servings:
- 2 zucchinis
- 150 g cherry tomatoes or date tomatoes
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
- Spice mix, Italian
- 1 garlic clove(s)
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Wash the zucchini, halve lengthwise, and cut into slices approximately 4-5 mm thick. Heat 1 tablespoon of olive oil in a grill pan and fry the zucchini until al dente. Finally, add the tomatoes to the pan and heat until they burst slightly. Transfer everything to a bowl and marinate with the remaining olive oil, balsamic vinegar, salt, pepper, seasoning mix, and chopped garlic clove.
