Westphalian potato casserole

Ingredients for 6 servings:

  • 100 g bacon, streaky
  • 200 g sausage (mettwurst, hard sausage)
  • 2 eggs
  • 2 large onions
  • 2 kg potatoes
  • 1 tbsp flour
  • 2 tbsp oil
  • Salt and pepper, black, freshly ground
  • Nutmeg, grated

Finely dice the bacon, skin the Mettwurst, slice it, and then cut it into strips. Peel and finely chop the onions. Peel and wash the potatoes, and grate them coarsely into a bowl. Mix the potatoes with the onions, eggs, flour, and oil. Season well with salt, pepper, and nutmeg. Oil a large, shallow casserole dish. Preheat the oven to 180°C (350°F). Pour half of the potato mixture into the dish. Spread half of the bacon and Mettwurst on top. Spoon the remaining potato mixture over the top and top with the remaining bacon and sausage. Bake the casserole on the middle rack for about 1 hour and 15 minutes. Serve with a green salad or coleslaw.
