For many thousands of years, honey has not only been one of the most valued luxury foods for humans – many animals also appreciate the delicious nectar.

  • The fact that the golden-colored delicacy enjoys such great popularity is certainly due in no small part to its high sugar content. With around 40 percent fructose, 30 percent glucose, and 10 percent polysaccharides, honey consists of around 80 percent sugar.
  • At around 15 percent, water is another important component of honey. The remaining 5 percent is made up of minerals, amino acids, phytochemicals, some vitamins, and enzymes – which play a key role in converting the sugar into honey.
  • The exact composition varies, of course, depending on the type of honey. A very rough distinction can be made, for example, between liquid and solid honey. The higher the glucose content of honey, the more solid it is. In liquid honey, on the other hand, the fructose content is significantly higher. Nevertheless, even the liquid honey will solidify after a while.
  • The amino acids found in honey are essential for our organism and our body also needs the B vitamins, which are important for our nerves, for example. Just like various trace elements that are required for muscle and bone development, among other things. However, the proportion of honey is not exactly high at just five percent.
