What is Bircher Muesli? Easily Explained

Very few people know what Bircher muesli actually is; even if you come across the term again and again. You can also simply imitate the classic yourself.

What is Bircher muesli

Every muesli fan has surely heard of the classic Bircher muesli.

  • Bircher muesli is traditionally made from oatmeal, nuts, some fresh fruit or dried fruit. Muesli is usually eaten for breakfast, either with milk, yoghurt or fruit juice.
  • The muesli known at the time as “Bircher Muesli” was developed by the doctor and nutritional reformer Maximilian Oskar Bircher-Benner. The muesli was named after him. It was first recognized as a kind of “diet food” in a Zurich sanatorium.
  • With the Bircher muesli, he wanted to give patients a better understanding of a healthier and wholesome diet. The recipe was developed by Bircher-Benner before 1900, but it was not widely recognized until the 1950s and is still known and loved throughout Europe today.

Sample recipe for a Bircher muesli

If you would like to imitate the Bircher muesli yourself, you will need 200 grams of tender rolled oats, 500 milliliters of milk, 4 tablespoons of chopped nuts (such as hazelnuts, almonds, walnuts), 3 tablespoons of raisins, 2 red apples, 2 teaspoons of honey and one half banana. If you eat vegan, you can ideally use plant-based milk. You can also use a substitute like maple syrup or agave syrup for the honey .

  1. Mix the oatmeal with the milk and let it swell for about 3-4 hours, preferably in the fridge. You can also prepare the mixture in the evening and let it soak in the fridge overnight.
  2. Then mix the nuts and raisins into the muesli.
  3. Wash the apples and grate them coarsely.
  4. Slice the banana.
  5. Now fold in the honey, grated apples and bananas and enjoy your healthy, homemade Bircher muesli.
