What is tofu made of and how?

Tofu is now very popular, and not just for vegans or vegetarians. But very few people know what it actually consists of and how it is made.

  • Translated from Chinese, the word tofu means something like “curdled bean”. You can already deduce the ingredients: Tofu consists of soy milk, which has become a kind of quark.
  • During production, soybeans are soaked in water and then boiled with salt and pressing. The slightly beige liquid is then heated again and a coagulant such as magnesium chloride or citric acid is added. This creates the well-known consistency.
  • The soft flakes that form when heated are skimmed off and pressed into a block. This is the result that we know as tofu and use it for various dishes. It provides us with many proteins, minerals such as iron, magnesium and potassium and vitamins such as vitamins D, E, B1 and 6.
