Every sweet tooth freaks out at the sight of these sweet cascades. But which chocolate is suitable for chocolate fountains? Unfortunately not your favorite milk chocolate. Use couverture instead! Thanks to its high-fat content, it guarantees a perfect result.
Find the best chocolate for chocolate fountains
Are you dreaming of a chocolate fountain from which cascades of smoothly flowing chocolate pour out? Then reach for couverture! This is considered the best variety for a delicious chocolate fountain. Fat is essential for the perfect flow of chocolate. Couverture contains most of this. Fat ensures a liquid-homogeneous mass and thus creates the flow properties that are required for the commissioning of the chocolate fountain. Chocolate bars, on the other hand, contain too little fat. It is better to use them for chocolate fondue or pastries.
It is up to you whether you prefer dark couverture, the whole milk variant, or white couverture, as used in our delicious Baileys balls. Theoretically, you can even make a mix of white chocolate and dark chocolate.
The recipe for your chocolate fountain
In addition to chocolate with high-fat content, you need another ingredient for the device – namely extra fat. This is the only way the result will be creamy. Ideally, you should use varieties that have little or no taste of their own. After all, the mass should taste like chocolate and not olive oil. So choose cocoa fat, coconut fat, cream, or milk. The following applies Mix 10 grams of fat for 100 grams of liquid chocolate.
Good to know: You can refine the chocolate even further according to your taste. Vanilla, chocolate or caramel syrup, rum, whiskey, amaretto, cream liqueurs, or coconut flakes are suitable.
Tips on melting the chocolate for your chocolate fountain
You now know which chocolate to use for chocolate fountains. But before your fountain can go into operation, you have to melt the couverture. And this is how you proceed step by step:
- Use about 70g of couverture per person. In addition, you need 7 g of fat of your choice.
- First, melt the finely chopped couverture gently in a water bath until a smooth mass is formed.
- Then add the fat and stir until combined. Finished!
Then fill this mass into the chocolate fountain – and the big dipping and snacking can begin!
