Ingredients for 4 servings:
- ½ cup sugar
- ½ cup water
- lemon peel
- ½ cup lemon juice, freshly squeezed
- 1 cup coconut milk
- 2 ½ cups ice cubes
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
Bring the sugar and water to a boil over medium heat, stirring occasionally. Once the sugar has dissolved, add the lemon peel. Let the lemon peel simmer in the syrup for a few minutes, then remove from the heat and let it steep for one hour. Strain the syrup through a sieve to reduce the liquid. Combine the syrup, lemon juice, coconut milk, and ice cubes in a blender and blend until the ice is completely broken down. Pour into 4 glasses and serve immediately.
