White chocolate coconut muffins

Ingredients for 1 servings:

  • 100 g chocolate, white
  • 300 ml milk
  • 200 g flour (type 405)
  • 50 g desiccated coconut
  • 2 tsp baking powder
  • 2 eggs
  • 100 g sugar
  • 80 ml oil
  • Fat for the mold
  • possibly paper cups

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Chop the chocolate into small pieces, warm it in the milk, and melt it. This works wonderfully in the microwave (1 minute at 600 watts, stirring vigorously with a whisk, repeat if necessary until the chocolate is melted). Combine the flour, desiccated coconut, and baking powder. Whisk together the eggs, sugar, and oil, then add the chocolate milk. Quickly stir in the flour mixture. Grease a muffin tin or line it with baking cups. Pour in the batter (it’s very runny, so it’s easy to pour) and bake in a preheated oven at 175°C (top/bottom heat) for about 25 minutes.
