White chocolate muffins

Ingredients for 20 servings:

  • 175 g flour
  • 200 g chocolate, white
  • 200 g potatoes
  • 1 packet of baking powder
  • 150 g apple
  • 125 g sugar
  • 40 g almond(s) or desiccated coconut
  • 2 eggs
  • 2 tsp lemon peel, untreated, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Combine flour, sugar, and baking powder. Wash and peel the apple, then cut it into small pieces and mix it into the flour. Grate the lemon zest and add it. Peel and grate the potatoes and mix well. Beat in the eggs well. Finally, melt the chocolate in a saucepan over low heat and mix everything together. Pour the batter into the muffins and sprinkle with almonds or desiccated coconut. Preheat the oven to 160°C (fan oven) and bake the muffins for 30-35 minutes.
