White Mousse on Berry Mirror

The perfect white mousse on berry mirror recipe with a picture and simple step-by-step instructions.

  • 300 g White couverture
  • 2 piece Eggs
  • 4 tbsp Rum
  • 500 ml Cream
  • 200 g Strawberries
  • 200 g Raspberries
  • 200 g Blackberries
  1. For the mousse, first melt the couverture in a water bath. Beat the eggs and rum in a water bath and stir the couverture into the egg mixture.
  1. Whip the cream until stiff, pour in the couverture mixture, mix well and refrigerate until it has set.
  1. Puree the berries and strain them through a sieve. Place the puree on the plates as a mirror and put some of the mousse on top.
