Ingredients
 

  • 300 g White couverture
  • 2 Eggs
  • 4 tbsp Rum
  • 500 ml Cream
  • 200 g Strawberries
  • 200 g Raspberries
  • 200 g Blackberries

Instructions
 

  • For the mousse, first melt the couverture in a water bath. Beat the eggs and rum in a water bath and stir the couverture into the egg mixture.
  • Whip the cream until stiff, pour in the couverture mixture, mix well and refrigerate until it has set.
  • Puree the berries and strain them through a sieve. Place the puree on the plates as a mirror and put some of the mousse on top.
