Ingredients
- 300 g White couverture
- 2 Eggs
- 4 tbsp Rum
- 500 ml Cream
- 200 g Strawberries
- 200 g Raspberries
- 200 g Blackberries
Instructions
- For the mousse, first melt the couverture in a water bath. Beat the eggs and rum in a water bath and stir the couverture into the egg mixture.
- Whip the cream until stiff, pour in the couverture mixture, mix well and refrigerate until it has set.
- Puree the berries and strain them through a sieve. Place the puree on the plates as a mirror and put some of the mousse on top.
