White Omelette with Crab and Chive Oil

Ingredients
 

  • 500 g North Sea Crabs
  • 1 tbsp Butter
  • 10 Pc. Egg Whites
  • 150 ml Sunflower oil
  • 1 bunch Chives
  • 1 pinch Sugar
  • Salt and pepper
  • 1 shot Lemon juice
  • 1 Pc. Baguette

Instructions
 

  • Mix the sunflower oil with the finely chopped chives, sugar, salt, pepper and lemon juice with a hand blender. Season the egg whites with white pepper and salt and whisk.
  • Heat the butter in a coated pan and add the egg white to the pan in portions and let it set. Fold the omelette in half and let it simmer in the oven and keep it warm.
  • Place the crab meat on the plates in portions, next to it the chive oil and next to it the omelette. Serve with an oven-warm baguette.
