Ingredients for 4 servings:
- 200 g ground almonds
- 1 ½ liters of milk
- 200 g white bread
- 10 cloves garlic
- 125 ml olive oil
- 2 tbsp sherry vinegar
- salt and pepper
- 250 g grapes, light

Spanish cold soup, also known as white gazpacho
Mix the almonds with the milk and refrigerate for 1 day. Cut the dry white bread into cubes, peel and coarsely chop the garlic. Press the almond milk through a sieve and discard the almonds. Purée the bread, almond milk, and garlic. Then, with the blender running, add the oil in a thin stream and add the vinegar, salt, and pepper. Serve with halved grapes.
