Whole-grain cookies with dried cherries

Ingredients for 1 servings:

  • 1 large banana(s)
  • 1 tsp lemon juice
  • 50 g cherry(s), dried
  • 75 g brown sugar
  • 50 g honey
  • ½ tbsp oil
  • 1 egg(s)
  • 1 egg white
  • 2 tbsp water
  • 75 g oat flakes, wholegrain
  • 75 g edible bran (oat bran)
  • 120 g wheat flour (wholemeal)
  • 1 tsp baking powder
  • 30 g almond flakes

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours

Line a baking sheet or sheets with parchment paper. Peel and dice the banana. Drizzle with lemon juice. Finely chop the cherries and set aside 1/4. Now combine 3/4 of the cherries, the banana, sugar, honey, oil, egg, egg white, 2 tablespoons of water, oats, oat bran, flour, baking powder, and 2/3 of the almonds into a dough. Preheat the oven to 175°C (150°C fan-assisted oven). Place teaspoonfuls of the cookies on the baking sheets, spaced a few inches apart, flatten them with your hand, and sprinkle with the remaining cherries and flaked almonds. Press in lightly. Bake the cookies for about 12-15 minutes. Remove from the oven and let cool. The cookies will keep for about 2 weeks if stored in an airtight container.
