Ingredients for 1 servings:
- 125 g butter, room temperature
- 1 egg(s)
- 80 g coconut blossom sugar
- 1 pinch of salt
- 1 tbsp honey
- 10 dashes vanilla extract
- 2 pinch(s) cinnamon
- ½ tsp cardamom
- ½ tsp anise powder
- 5 drops of bitter almond oil
- 10 dashes of rum flavoring
- 50 g buckwheat flour
- 25 g spelt flour type 630
- 1 tsp, leveled baking powder
- 200 g oat flakes, wholegrain
- Dark chocolate coating, optional

Cream the butter with the egg, sugar, and vanilla extract. Add the honey, salt, and other spices and flavorings and mix. Then add the oats, both flours, and baking powder and mix everything well. Form small balls and place them on a baking sheet lined with baking paper. Bake in a preheated oven at approximately 180°C (top/bottom heat), gas mark 2-3, for approximately 10-15 minutes. Let them cool on a wire rack. You can also dip them in dark chocolate or chocolate; I left this out because of the sugar. They taste just as good. You can also add other spices, such as ginger, a little pepper, nutmeg, chili peppers, cardamom, cinnamon, or 1/2 teaspoon of cocoa powder. Or you can use a packet of store-bought Christmas spices. Have fun baking! They’re very quick to make. The recipe makes approximately 30 cookies. One cookie has 48 calories. Enjoy!
