In order for a bread to be called whole grain bread, it must meet certain requirements. The flour used must come from 90 percent whole grain grains. In addition, the following ingredients are used for whole grain bread: water, yeast, leaven, salt, and other spices. Wholemeal bread is usually a mixture of wholemeal rye and wheat flour in any ratio.

Origin

Cereals have been a staple of human nutrition since the beginning of agriculture around 10,000 years ago. Wholemeal bread can be stored longer than light bread. Room temperature is sufficient for this. If stored properly, whole grain bread will keep for about four days. Rye bread has a much longer shelf life than wheat bread.

The ingredients of whole grain bread include vitamin B1 and minerals such as phosphorus, chloride, zinc, and plenty of manganese and copper. Wholemeal bread also contains fiber. 100 g of wholemeal bread made from wheat and rye flour contain an average of 198 kcal or 828 kJ, 7.2 g protein, 1.2 g fat, and around 39 g carbohydrates. Wholemeal bread is a good source of energy due to its carbohydrate content. Another advantage: that dietary fiber keeps you full for longer, and digestion can be positively influenced. Incidentally, vitamin B1 ensures normal energy-yielding metabolism, and zinc is responsible for maintaining normal skin.
