Wiigueteli according to grandmother's style

Ingredients for 1 servings:

  • 750 g sugar
  • 3 dl red wine
  • 2 eggs
  • 1 pkt. spice mix (Wiiguetelligewürz), 100 g
  • 125 g ground almonds
  • 1 tbsp cocoa powder
  • 1 lemon(s) or orange, grated peel only
  • 1 tsp baking soda or 1 sachet baking powder
  • 1 kg flour, (up to 1.5 kg flour may be needed)

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Christmas cookies

The Wiigueteli spice consists of cloves, cinnamon, sandalwood, and sugar. Mix all ingredients except the baking soda and flour thoroughly. Stir in some of the flour and knead the rest on the countertop. The dough should form a firm dough. Roll out the dough to a thickness of 8 mm and cut out shapes as desired. Let it dry for at least 12 hours. Bake for 12 minutes at 180°C. If desired, mix a thin glaze of powdered sugar, wine, and 2 drops of oil. Brush the glaze onto the still-hot cookies.
