Wild boar bolognese

Ingredients for 4 servings:

  • 1 large onion(s), finely chopped
  • 2 tbsp olive oil
  • 1 medium-sized carrot(s), finely diced
  • 100 g celery, finely diced
  • 500 g minced wild boar meat
  • 2 tbsp tomato paste
  • 1 tsp sweet paprika powder
  • ⅛ liter red wine
  • ⅛ liter of water
  • 500 g tomatoes, pureed
  • 1 stock cube
  • 2 tbsp sugar
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, crushed
  • 1 bay leaf
  • 1 sprig(s) rosemary
  • 1 sprig(s) of oregano
  • 3 juniper berries
  • salt and pepper
  • 1 tbsp, heaped fresh parsley, chopped

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Sauté finely chopped onion with olive oil in a pan. Add the diced carrots and celery and brown. Add the minced wild boar and brown. Add the tomato paste and paprika and brown lightly, then deglaze with red wine. Top up with water and passata. Add the stock cube, sugar, balsamic vinegar, and the crushed garlic cloves. Place the bay leaf, rosemary, oregano, and juniper berries in a tea infuser. Add the sauce to the dish and simmer gently (about 20 minutes) until the sauce thickens slightly. Season with salt and pepper. Sprinkle with parsley and serve with pasta of your choice. Tip: The sauce tastes best with spaghetti.
