Wild boar medallions with mushroom sauce

Ingredients for 2 servings:

  • 400 g game (wild boar back), boned
  • Soy sauce
  • Oil (sesame oil)
  • wine, white
  • Tomato ketchup
  • 100 g bacon, streaky
  • 1 large onion(s)
  • 4 cloves garlic
  • 1 handful of porcini mushrooms, dried
  • 100 ml white wine
  • 100 ml cream
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Soak the mushrooms in hot water. Finely trim the meat, slice it, mix the marinade ingredients together, and marinate the meat for at least half a day. (It only needs to be just coated with the marinade.) Finely slice and dice the bacon, finely dice the onions, and fry both until browned. Add the meat slices and sear them again. Deglaze with the mushrooms, soaking water, and white wine. Press in the garlic. Cover and simmer for about 15 minutes. After 10 minutes, add the cream. Add a little more wine, if desired. Season to taste (perhaps with a little porcini oil) and serve with fried potatoes.
