Ingredients for 25 servings:

  • 500 g flour
  • 60 g sugar
  • 1 tsp salt
  • 40 g butter / margarine
  • 2 eggs, including the yolk
  • 125 ml milk
  • 125 ml water, hot
  • 1 cube of yeast
  • some flour, for dusting
  • Fat, for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Put the flour, sugar, and salt in a bowl. Add the softened fat and egg yolk. Add the milk to the hot water. Crumble the yeast into small pieces and dissolve it in the lukewarm liquid. Knead everything with the dough hook of a hand mixer until you have an elastic dough. Dust the dough with a little flour, cover, and let it rise in a warm place for about 30 minutes. Knead the dough and roll out to a thickness of about 1.5 cm. Cut out circles with a diameter of about 10 cm. Cut out the center (about 3 cm in diameter), e.g. using a shot glass, and remove it. Work the dough one at a time. Cover the donuts and let them rise for another 20 minutes. In the meantime, heat the fat to 175 degrees Celsius. Fry the donuts in batches for about 2 minutes on each side until golden brown. Remove the donuts, drain well, and roll them in sugar. Of course you can also cover them with icing or chocolate coating etc.
