Ingredients for 4 servings:

  • 4 wild boar loins, boned and cut into steaks
  • 1 roll(s) of goat cheese
  • 4 tbsp honey
  • some clarified butter
  • 2 tbsp game spice

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 20 minutes

With goat cheese and honey

Rub the loin pieces with the spice mixture. Sear them on all sides in a pan with clarified butter. Then cook in a preheated oven at 120°C (fan oven) for 15-20 minutes. Then spread the goat cheese and honey over the meat and set the oven to 220°C (grill oven). Watch and remove when the cheese browns. Let rest a little longer, then serve. Brussels sprouts go well with it.
