Ingredients for 4 servings:
- 500 g lamb’s lettuce
- 2 oranges
- 5 walnuts
- 120 g goat cheese roll, mild
- ½ pomegranate
- 1 tbsp olive oil
- 1 tbsp walnut oil
- 1 tbsp balsamic vinegar
- 1 tbsp goat yogurt
- 1 tsp mustard, medium hot
- 1 tsp honey
- salt and pepper

Winter salad with lots of vitamin C
Wash the lamb’s lettuce thoroughly, spin it dry, and place it in a bowl. Fillet the oranges, halve the fillets, and arrange them on the salad. Squeeze the remaining orange juice and pour the juice into a mixing bowl for the dressing. Cut the goat’s lettuce into small pieces and sprinkle them on the salad. Place the half pomegranate cut-side down on one hand so the seeds can fall through your fingers. Firmly tap the pomegranate with a wooden spoon to remove the seeds, ideally directly onto the salad. For the dressing, mix the olive oil, walnut oil, balsamic vinegar, mustard, honey, goat’s yogurt, salt, and pepper with the orange juice. Crack and chop the walnuts, and add them to the dressing. Pour everything over the salad and serve.
