Wild garlic and asparagus sauce

Ingredients for 4 servings:

  • 200 g asparagus – sections (preferably fresh), cleaned
  • 1 small bunch of wild garlic
  • 1 pinch of salt
  • 1 tsp, heaped butter, cold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

simple, easy and delicious

Boil the asparagus pieces in gently boiling water for about 10 minutes. Drain the water, leaving a small amount, and let it evaporate for 5 minutes. Puree the asparagus pieces, wild garlic, and salt with a hand blender. Finally, add the cold (!) butter and blend briefly again with the hand blender. Tip: During the wild garlic-free season, I’ve also substituted it with chives and a little garlic. It also tastes good with spring onions.
