Wild garlic and zucchini soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 cloves garlic
  • 25 g butter
  • 2 m.-sized potatoes
  • 1 m.-large zucchini
  • 1 bunch of wild garlic (100 g)
  • 1 liter vegetable broth
  • 125 g cream cheese with chives (or similar)
  • some cream as desired
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the onion and garlic and sauté in butter. Meanwhile, dice the potatoes and zucchini, add them, and sauté briefly. Add the vegetable stock and simmer until soft (about 10 minutes). Shortly before the end of the cooking time, add the sliced ​​wild garlic, reserving some for garnish if desired. Add the cream cheese and a little cream, if desired, and purée the soup. Season to taste with salt and pepper.
