Ingredients for 3 servings:

  • 1 bag salad mix, green
  • 1 mango(s)
  • 1 small beetroot
  • 2 carrots
  • 6 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp mustard
  • salt and pepper
  • Herbs to taste, such as oregano
  • Turmeric or ginger

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and chop the salad mix, mango, beetroot, and carrots, and combine in a large bowl. For the dressing, combine the remaining ingredients and season to taste. Drizzle over the salad just before serving.
