Wild garlic buds pickled in vinegar

Ingredients for 1 servings:

  • 2 handfuls of wild garlic (buds)
  • 300 ml vinegar
  • 1 tsp salt
  • 1 tsp juniper berries
  • 1 bay leaf

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 43 minutes

Mix the vinegar with salt and spices and bring to a boil briefly. Wash and blanch the wild garlic buds, place them in sterile jars, and pour the hot vinegar solution over them. Seal the jars tightly and let stand for at least two weeks. The pickled buds will keep for up to a year.
