Wild garlic cheese spaetzle

Ingredients for 2 servings:

  • 400 g flour
  • 200 g wild garlic
  • 4 m.-sized eggs
  • Salt
  • 400 g mountain cheese
  • 2 m.-sized onion(s)

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Wash, dry, and finely chop or puree the wild garlic. In a bowl, combine the flour with the wild garlic, eggs, and salt, and beat to form a spaetzle dough. Let it rest. Bring a pot of salted water to a boil. Meanwhile, chop the onions and fry over medium heat until light brown, then grate the cheese. Preheat the oven to approximately 100°C (convection oven). Grease a bowl and set aside salt, pepper, and nutmeg. Prepare the spaetzle using a spaetzle press or spaetzle maker. Press the spaetzle into the salted water and let it simmer for a few minutes. Then layer the spaetzle in the greased bowl with the cheese, onions, and spices. Then, covered, let it melt in the oven for approximately 30 minutes.
