Wild garlic mustard

Ingredients for 1 servings:

  • 250 g mustard seeds, yellow
  • 50 g mustard seeds, black
  • 4 bunches of wild garlic
  • 2 tsp ground ginger
  • 125 g sugar
  • 1 tsp salt
  • 300 ml vinegar (white wine vinegar)
  • 200 ml wine (white wine)

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Freeze the mustard seeds for at least 2 hours. Then grind them finely in a food processor. Finely chop the wild garlic. Add it to the ground mustard seeds along with the ginger, sugar, and salt. Bring the vinegar and wine to a boil. While still hot, pour the mixture into the mustard mixture, stirring continuously. Pour into well-cleaned jars and seal. Let it steep for at least 2 weeks.
