Wild garlic pesto

Ingredients for 4 servings:

  • 200 g wild garlic
  • 200 g pine nuts
  • 200 ml olive oil
  • 100 g cheese (Pecorino, alternatively Parmesan)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rinse the wild garlic, trim, and shake dry. Set aside some for garnish, then finely chop the rest. Toast the pine nuts in a dry pan. Set aside 1 tablespoon of this, then roughly chop the remaining nuts. Place the wild garlic and pine nuts in a deep-sided bowl. Slowly add the oil and blend everything with a hand blender until smooth. Finely grate the pecorino and stir it into the paste. Season to taste with salt and pepper. Transfer the pesto to a small bowl and sprinkle with the pine nuts.
